| Ingredients:
1 pound ground beef (95% lean)
1 tablespoon Worcestershire sauce
4 canned pineapple slices, drained from juice
12 small whole-wheat dinner rolls
Lettuce leaves
Tropical BBQ Sauce:
1/3 cup barbecue sauce
1/3 cup pineapple preserves or jam
1 tablespoon packed brown sugar
Directions:
1. Adult help needed: ADJUST the oven rack so the surface of the broiler pan is about 4 inches from the broiler. TURN the oven to the broiler setting.
2. PLACE the ground beef and Worcestershire sauce in a medium bowl. MIX lightly with a rubber spatula, but not too much. DIVIDE the beef mixture into 12 equal portions. SHAPE each portion into mini burgers about 1/2-inch thick. SET ASIDE on a baking sheet. WASH your hands thoroughly.
3. To make the sauce, PLACE the barbeque sauce, pineapple preserves and brown sugar in a glass 1-cup measuring cup. STIR with a spoon to mix well.
4. Adult help needed: PLACE the measuring cup in the microwave oven. MICROWAVE uncovered for 40 to 60 seconds or until hot. Careful! Measuring cup will be very hot! Using pot holders, STIR with a spoon. PLACE 1/3 cup of the sauce in a small bowl and SET ASIDE to serve with the cooked burgers. Use the remaining sauce for brushing in steps 5 and 6.
5. Adult help needed: LAY the pineapple slices on the rack in the broiler pan. BRUSH with some of the remaining sauce. PLACE the broiler pan in the oven. BROIL 2 minutes. Careful! Broiler pan will be very hot! Using pot holders, REMOVE the broiler pan and TURN the pineapple slices over with metal tongs. BRUSH with more of the sauce. BROIL 2 minutes more. Using pot holders, REMOVE the broiler pan. PLACE pineapple slices on a plate and cover with aluminum foil to keep warm.
6. Adult help needed: PLACE the burgers on the same broiler pan. PLACE the broiler pan in the oven. BROIL 4 minutes. Careful! Broiler pan will be very hot. Using pot holders, REMOVE the broiler pan and TURN the burgers over with a metal spatula. BROIL 3 to 4 minutes more, until the burgers are no longer pink in center and juices show no pink color. The burgers are done when a food thermometer stuck into the burgers reads 160 degrees. Using pot holders, REMOVE the broiler pan. BRUSH the burgers with the rest of the sauce.
7. Adult help needed: While the burgers are cooking, use a sharp kife and cutting board to carefully SLICE the rolls in half. CUT each pineapple slice into 3 equal pieces. TEAR the lettuce leaves into smaller pieces to fit in the rolls.
8. PLACE the sliced rolls on a serving platter. LAY some lettuce on the bottom of each roll. PUT a burger on top of the lettuce, then TOP the burger with a pineapple piece. PLACE the roll top on the pineapple and PRESS down slightly to hold the bun in place. SERVE with the sauce that was set aside in step 4. |
