Ingredients:

1 pound boneless beef top sirloin steak, cut 1 inch thick
1 medium red bell pepper, washed
1 medium zucchini, washed
16 canned pineapple chunks, drained
Salt and pepper
Instant brown rice (enough for 4 servings, using ingredients as listed on package)

Marinade:
1 medium lime, washed
3 large peeled cloves garlic
2 tablespoons sesame seeds
2 tablespoons soy sauce
2 tablespoons honey

Directions:

1. Adult help may be needed: To prepare the marinade, with a cutting board and sharp knife, cut the lime in half. SQUEEZE the juice from the limes using a citrus reamer or juicer. MEASURE 2 tablespoons juice; pour into a 1-cup microwave-safe measuring cup. CRUSH the garlic in a garlic press. ADD the garlic, sesame seeds, soy sauce and honey to the lime juice. STIR with a spoon until well blended. MEASURE 1/4 cup marinade and pour into a medium bowl.
2. Adult help may be needed: Carefully CUT the beef steak into 16 equal pieces; set aside. ADD the beef to the medium bowl; TOSS to coat the beef with the marinade. Carefully and thoroughly WASH your hands, the cutting board and knife. COVER with plastic wrap and marinate in the refrigerator for 30 minutes to 2 hours. COVER the remaining marinade with plastic wrap and refrigerate.
3. Adult help may be needed: Carefully CUT the bell pepper into 16 equal pieces, removing and discarding the stem, seeds and white ribs; set aside. CUT the zucchini lengthwise in half, then CUT each half crosswise into 8 pieces.
4. REMOVE the beef pieces from the marinade with tongs to a plate; THROW away the marinade thatís left.
5. Adult help may be needed: Alternately THREAD 2 pieces each of beef, bell pepper, zucchini and pineapple onto each of eight 10-inch metal skewers. Careful!! The tip of the skewer is sharp.
6. Adult help needed: Using barbecue tongs, PLACE the kabobs on a grid over medium, ash-covered coals. GRILL, uncovered, 8 to 10 minutes for medium rare to medium doneness, turning occasionally. Careful! Watch for flare-ups on grill! Wear barbecue mitts when turning the kabobs. REMOVE the kabobs to a clean plate. SEASON with salt and pepper, as desired.
7. Adult help may be needed: Meanwhile PREPARE rice according to microwave package directions following the ingredient amounts for 4 servings.
8. Adult help may be needed: PLACE the reserved marinade in the microwave. MICROWAVE on HIGH 30 to 60 seconds or until hot and just beginning to bubble. Using pot holders, REMOVE the bowl from the microwave. STIR with a spoon. Careful! Bowl may be hot!
9. SERVE the kabobs over the rice. DRIZZLE everything with the heated merinade. Cookís Tip: Pepita is the Mexican name for a hulled pumpkin seed. Dark green in color, pepitas have a delicate flavor that is even better when toasted.
