Ingredients:

1 tablespoon vegetable oil
1/4 cup grated parmesan cheese
1 teaspoon dried Itailian herb seasoning
4 medium russet potatoes, scrubbed and cut into 1/2-inch wedges
salt

Directions:

1. HEAT oven to 475 degrees.
2. In a large bowl, MIX the oil, cheese and herb seasoning. ADD potato wedges and TOSS to coat.
3. ARRANGE wedges in a single layer on a baking sheet.
4. BAKE for 15 minutes. REMOVE sheet from oven with pot holders. Carefully TURN the wedges over using a spatula.
5. PUT BACK in oven and cook another 15 minutes (or until potatoes are golden brown.)
6. Carefully TAKE OUT of the oven using pot holders.
7. SEASON with salt, if desired.
8. SERVE on a plate.
