| Ingredients:
3/4 teaspoon coarsely ground black pepper
1-1/2 teaspoons very finely chopped mint leaves
6 cups seedless red watermelon cubes
Fresh mint leaves, if desired
Directions:
1. MIX pepper and chopped mint in a small bowl.
2. PUT watermelon cubes into a large bowl. TOSS spice mixture gently but thoroughly with watermelon.
3. PLACE in refrigerator until cold.
4. SPOON into serving glasses or bowls.
5. GARNISH with a fresh mint leaf, if you want to.
